Jessica and I found a few recipes using cranberries and decided to try one for dessert today! It was delish...a real keeper...one that I think we'll try again.
New England Cranberry Duff
Butter 8" square pan. Put 1 1/2 cups cranberries in pan. Pour 1/2 cup sugar over the berries. Melt one cup of butter. Set aside. Put 2 eggs in bowl. Beat with 1 cup sugar. Beat for one minute. Add 1 cup flour and 1/2 teaspoon salt. Add butter. Beat. Pour over berries. Bake at 325 degrees for 45 minutes. Cool. Enjoy with some vanilla ice cream. Yummers!
